This Chicken Adobo Instant Pot Recipe brings together the familiar salty, tangy, and garlicky flavors of Filipino adobo with the convenience of pressure cooking. Every Filipino family seems to have its own way of making adobo, and this is my Instant Pot version. I add oyster sauce for extra savory flavor and finish the sauce with butter to make it richer, smoother, and perfect for spooning over hot rice.

Chicken adobo is a beloved Filipino dish made by simmering chicken in vinegar, soy sauce, garlic, bay leaves, and whole black peppercorns. The chicken cooks until tender, and the sauce is usually reduced until its flavors become rich and concentrated.

There is no single way to prepare Filipino adobo. Some families prefer it more tangy, while others like it saltier, sweeter, saucier, or almost dry.

In this recipe, I brown the chicken before pressure cooking to build more flavor. I also add oyster sauce and finish the sauce with butter. These are my personal additions that give the sauce extra savory depth and a rich, smooth finish.

  • Salt to taste: Add only after tasting the finished sauce.

How to Make Chicken Adobo in the Instant Pot

1. Brown the chicken

Select the Sauté setting on the Instant Pot. Once the pot is hot, add the cooking oil.

Arrange the chicken pieces in a single layer and brown them for 2–3 minutes per side. The chicken does not need to cook completely during this step.

Work in batches if necessary so the pieces brown instead of steam. Transfer the browned chicken to a plate and set it aside.

2. Sauté the onion and garlic

Add the chopped onion to the Instant Pot and cook for 1–2 minutes, or until it begins to soften.

Add the crushed garlic and cook for about 30 seconds, just until fragrant. Watch it carefully because garlic can burn quickly.

3. Deglaze the pot

Pour the water into the Instant Pot. Use a wooden spoon or silicone spatula to scrape the bottom thoroughly and loosen any browned pieces left from the chicken.

This step adds those flavorful browned bits to the sauce and helps prevent the Instant Pot from displaying a burn warning.

4. Add the sauce ingredients

Pour in the soy sauce, vinegar, and oyster sauce. Add the sugar, whole black peppercorns, and bay leaves.

Gently stir everything together, then return the browned chicken and any juices collected on the plate to the pot.

5. Pressure-cook the chicken

Secure the Instant Pot lid and move the steam-release valve to the Sealing position.

Select Pressure Cook and cook on High Pressure for 7 minutes.

The seven-minute cooking time begins after the Instant Pot reaches full pressure.

6. Release the pressure

When the cooking cycle finishes, allow the pressure to release naturally for 10 minutes.

After 10 minutes, carefully move the steam-release valve to Venting to release the remaining pressure. Keep your hands and face away from the escaping steam.

Wait until the pressure pin drops completely before opening the lid.

7. Reduce the adobo sauce

Transfer the cooked chicken to a clean plate.

Select Sauté and simmer the sauce uncovered for 5–10 minutes, stirring occasionally, until it reaches your preferred consistency.

Reduce it longer if you enjoy a darker and more concentrated adobo. Simmer it for less time if your family prefers plenty of sauce to spoon over rice.

8. Finish with butter

Turn off the Instant Pot and stir in the butter until completely melted.

Taste the sauce before adding salt because the soy sauce and oyster sauce are already salty. If the sauce becomes too salty or concentrated, stir in a small amount of water.

If you prefer a tangier adobo, add a small splash of vinegar and taste again.

9. Coat the chicken and serve

Return the chicken to the Instant Pot and turn each piece in the reduced sauce until evenly coated.

Serve hot with steamed white rice and spoon plenty of that buttery adobo sauce over the top.

Tips for the Best Instant Pot Chicken Adobo

Use completely thawed chicken

The seven-minute pressure-cooking time is intended for fully thawed chicken. Frozen chicken requires a different cooking time and releases additional liquid into the sauce.

Brown in batches

Avoid overcrowding the Instant Pot. Giving the chicken enough room helps it brown properly and develop better flavor.

Deglaze thoroughly

Scrape the bottom of the pot after adding the water. Anything left stuck to the bottom may cause a burn warning.

Reduce the sauce afterward

Very little liquid evaporates while the Instant Pot is sealed. Simmering the sauce after pressure cooking concentrates its flavor and lets you control how saucy or dry you want your adobo.

Adjust the seasoning at the end

Different vinegars and soy sauces can vary in acidity and saltiness. Let the sauce reduce first, then taste and adjust it with a little water, vinegar, sugar, or salt if needed.

Use the vinegar you normally use for cooking or making adobo. Different types can vary in acidity and flavor, so taste the sauce after reducing it and adjust it according to your preference.

Why did my Instant Pot display a burn warning?

Something may have remained stuck to the bottom of the inner pot. After browning the chicken and aromatics, add the water and scrape the bottom thoroughly before pressure cooking.

Why is my adobo sauce watery?
