Burger Steak With Mushroom Gravy

Seasoned beef patties topped with homemade mushroom gravy, sautéed garlic, and green onions. This easy Filipino-style burger steak is perfect with hot steamed rice.

Ingredients
  

For the Burger Steak Patties
  • 1½ lbs ground beef 80/20
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp beef powder
  • 1½ tsp ground black pepper
  • ½ cup breadcrumbs
  • 2 large eggs
  • Salt to taste
  • Cooking oil as needed, for frying
For the Mushroom Gravy and Garnish
  • 8 cloves garlic minced
  • Cooking oil as needed, for sautéing the garlic
  • 6 tbsp all-purpose flour
  • 4½ tbsp salted butter
  • 1½ tsp onion powder
  • 1½ tsp garlic powder
  • ½ tsp ground black pepper
  • 1 tsp beef powder
  • 1¾ cups water plus more as needed
  • 4 oz sliced brown mushrooms
  • Salt to taste
  • Chopped green onions for garnish

Method
 

  1. Prepare the beef mixture. In a large bowl, combine the ground beef, onion powder, garlic powder, beef powder, black pepper, breadcrumbs, eggs, and salt to taste. Mix by hand or with a stand mixer until just combined.
  2. Shape the patties. Scoop handfuls of the mixture and shape into evenly sized burger patties.
  3. Cook the patties. Heat a little cooking oil in a frying pan or grill pan over medium heat. Cook a small test patty first and adjust the seasoning if needed. Fry the remaining patties until browned on both sides and cooked through. Set aside.
  4. Sauté the garlic. Heat a little cooking oil in a pot over medium heat. Add the minced garlic and sauté until fragrant and lightly golden. Remove the garlic and set aside for garnish.
  5. Save the garlic-infused oil. Carefully transfer most of the garlic-infused oil to a heat-safe container, leaving only a thin coating in the pot. Let the reserved oil cool and refrigerate promptly for use in other dishes.
  6. Make the roux. Melt the salted butter in the same pot. Add the all-purpose flour and stir continuously for 1–2 minutes until a smooth roux forms.
  7. Make the gravy. Add the onion powder, garlic powder, beef powder, and black pepper. Gradually pour in the water while stirring or whisking to prevent lumps. Simmer until the gravy starts to thicken. Optional: For a richer, smoother gravy, turn the heat to low or off and stir in an additional ½–1 tablespoon of butter until completely melted and incorporated.
  8. Add the mushrooms. Stir in the sliced brown mushrooms and simmer until tender. Add more water if the gravy becomes too thick, then taste and adjust the salt as needed.
  9. Serve. Arrange the cooked burger patties on a serving plate and spoon the mushroom gravy over them. Top with the reserved sautéed garlic and chopped green onions. Serve with hot steamed white rice.

Notes

  • I prefer using a grill pan for extra browned flavor, but a regular frying pan works just as well.
  • Mix the beef just until combined to keep the patties from becoming dense.
  • Start with 1 ¾ cups of water and add more if the gravy becomes too thick.
  • Optional butter: For a richer, smoother mushroom gravy, stir in an additional ½–1 tablespoon of butter at the end of cooking. This adds extra flavor without significantly changing the gravy's consistency.
  • Taste before adding more salt because beef powder and salted butter already contain sodium.
  • Store the garlic-infused oil in a jar and use in other dishes.
  • This recipe makes about 9 servings, depending on patty size.
  • Refrigerate cooked leftovers for up to 3–4 days.
  • Thaw frozen uncooked patties in the refrigerator before frying.
